I've still got version 0.92 installed and only just realised there's a whole new release version! So I want to update to 1.2 but do I need to uninstall the old version first or if I just download and install the latest version will that overwrite / update the old one?
The instructions of installation state to remove the older version first. I have to keep 0.92 because the two extensions I use most do not work with the later versions of Inkscape. I solved that problem by removing the older version and re-installing it to a version specific folder, i.e., "C:\Program Files\Inkscape092\inkscape.exe" which is an option during the installation. The same applies for later versions, change the destination folder to represent the version being installed.
It may also be necessary to configure the file locations within program preferences to prevent extension conflicts.
