I've several .svg's from 1.02. When I either double click the file icon or File > Open, Inkscape freezes. IF I open from 'Load', the same files appear functional.
Same macOS here; I had to get rid of any former Inkscape installations (AppCleaner.app) to use at least the latest version. Double click don't work for me because I have too many apps that uses SVG - so I have to decide from file to file via context-Menü to tell which app I want to use. Dragging onto app icon in the dock works as well.
I can understand double-click sending an .svg to the wrong app (ie. not the latest Inkscape). But in my case it always goes the new v1.1. It's the crashing of 1.1 that's the pain.
Have deleted 1.02 from Trash and files most of the time open on double-click or from File > open, but 1 file still sometimes crashes it from the double click.
Sorry to hear that. Only thing I do in extreme sceneries is to shut down the Mac wait at least 30sec and start again - this isn´t the same as a restart - believe me.
You didn´t tell what machine you´re using. Does Inkscape appear in macOS/Preferences/Security+Privacy under Files and Folder? If not add it to the list please. Maybe it´s just the paranoid BigSur security case.
I was misreading your OSX 10.14.6 with 11.4 somehow what I ´m using. So I don´t have any more ideas because Mojave and BigSur are 2 complete different Systems.
Maybe you can take the next crash to catch the Console-app bug entry and copy+paste it into a new TextEdit file and load it up here - I will forward it in the chat and hopefully one can read it and give a clue what´s up on your site.

Again: Do you had any former versions installed? If so use AppCleaner.app to delete everything related to Inkscape installation - reinstall 1.1.
Not used AppCleaner yet as want to check it out.

Get rid of all the Library stuff with Appcleaner.app please before proceeding. Just deleting Inkscape is definitely not enough.
Done as suggested. Still an occasional crash when double clicking to open files or opening from File > open.

Tried the reboot and still have intermittent problems with crashes.
My macOS/Preferences/Security+Privacy doesn't have a: Files and Folder.......... !
