I found a way to open eps files on Inkscape for Windows. However, I now have a Mac. Will Inkscape for Mac open eps files? I don't want to install it if it doesn't.
You can download Ghostscript from this website, that's what you need to import eps files in Inkscape. Installing it is very easy. https://pages.uoregon.edu/koch/
And if you use the official dmg file for 0.92.2 for Mac, it should work. So, if you succeed, please tell us so.

...which was a test file I noticed from somewhere. My .eps files don't load also.
I don't see the option to import an .eps file in OPen or Import. I must select 'All files' rather than 'All Inkscape files' in the open file dialog. SHould I see .eps files?

macOS BIG SUR V 11.6, IMAC 2017.
Inkscape 1.1.1 (c3084ef, 2021-09-22)
Ghostscript 9.55 - For Mojave (macOS 10.14) and Higher. obtained from https://pages.uoregon.edu/koch/ 'This version of Ghostscript was released on September 27, 2021'
CUSTOMIZE install for Ghostscript - OPTIONAL GHOSTSCRIPT DYNAMIC LIBRARY
Not sure what this means: 'check libgs in the resulting list.'
I restarted the iMac after installing Ghostscript.
I have verified that Ghost is installed, by running it in the Terminal.
And here is another option.. You could try installing Inkscape 1.0.2, a slightly older version of Inkscape. Here it opens eps files with Ghostscript under MacOS Catalina without a problem. And then an eps file does show up under open 'all Inkscape files'.
I cannot test it with BigSur, as my hardware is too old.

Thanks Kirsten! Worked like a champ. I can now use Inkscape to convert my eps files to svg files instead of using the online conversion sites.

@MyndSurfer Open the EPS with Preview.app which converts it to PDF on the fly - save and open with Inkscape.

This worked just fine. And the object can be ungrouped and manipulated.
Then save as .svg
