First of all, you deserve a big clap for your hard work. As soon as I found that Inkscape 1.0 is available, I installed it on Kubuntu 20.04 using the AppImage. It works fine when I double click the AppImage. But there is no icon from which I can initiate Inkscape 1.0. Also, I have no idea where the files related to1.0 are.
All of the files are in the appimage itself. It's a self contained app, so you don't really install it like you would other kind of applications. I don't know how Kubuntu is laid out, but on Mint, I just go to the applications menu and create a new menu item in the Graphics section. There it allows me to point to a file, so I locate the app image through there and give it a custom icon. Finally, I add it to my dock (Plank). Perhaps Kubuntu has a similar feature?
It may be a good idea to create a folder in your home directory for app images like Home/App Images and just stick the Inkscape app in there.

Any pointers will be great.

Many thanks. I did the same. Yes, Kubuntu allows adding custom entries to the start menu.
Not sure why Inkscape has no PPA for this version. I would like to go conventional but not snap.
I'd prefer a ppa too. That may come in time though!
That would be awesome. Who will build that, Inkscape ?
There is a PPA with an Inkscape 1.0rc1 for 'buntu 20.04 https://launchpad.net/~inkscape.dev/+archive/ubuntu/stable
Give the maintainer a bit of time and I am sure there will be an update.
