I have been teaching Adobe Illustrator to high schools students for 20 years but this fall that will not be possible because I will be working remotely with my students. Inskape could be the perfect alternative! Or not...some of my students will be working on tablets. Wondering if there is an app for tablets, is it available for different operating systems and how similar is it to the desktop version.

No mobile/tablet versions AFAIK. Builds are available for Win, Mac, Linux.
Skills and concepts learned in Inkscape are widely transferable to other vector graphics programs.
