I guess I spoke too soon about my problems with the dialog box being over!
I was working along, and I screwed up part of my work past reclaiming. So I quit without saving. Then when I opened that file again (and any other for that matter), the dialog box was empty and nothing could make it reappear! (See attached image.)
Before I quit, I had three dialogs open in the tools, Objects was displayed and Fill and Stroke and Object Properties were minimized.
I'm running a dying late 2009 Mac with macOS 10.13.6 and Inkscape 1.0.2.
Actually, that's a known Inkscape bug. The dialogs are there, but they only display if the main window is resized or the left side of the dock is dragged. https://gitlab.com/inkscape/inkscape/-/issues/1917
If you don't still need any mac-specific programs, the mac hardware can run Linux well and Inkscape runs best under Linux. It might be possible to have both OSs on the machine (dual boot) too.

While I was typing this post, the sidebar drew itself and now everything looks fine!
Argh. My apologies. I really really hope I can replace this thing soon. . . .
