A tutorial, with the Perspective/Envelope effect on a text, shows during the transformation, the nodes connected by red lines corresponding to the outline of the original text, but I don't have these red lines when I do the transformation?

WRT the red lines, I'd ensure that this button in the node tool controls is active.
